Current Android method
On current Android versions, removing a Google Account from a phone is normally done from the device account settings. Menu names vary by manufacturer. Google lists names such as Passwords & accounts, Users & accounts, or Manage accounts.

If the account still appears after removal
Check whether the account is still signed in inside a separate app, browser profile or work profile. Some phones also show accounts managed by a device administrator. Removing a Google Account from Android settings should not be confused with removing a browser profile or deleting the account permanently.
If the device is being sold or given away, first back up the data you need, remove your accounts through normal settings, and then use the manufacturer’s supported reset process. That reduces the chance of leaving personal information on the device and avoids triggering account-protection problems for the next legitimate owner.
